Mindfulness in food…A New Year’s Resolution

We all eat every day.  How often do we think about our food?

Being mindful of all aspects of what we eat can be a bit overwhelming.  For example, let’s stop and ponder produce: How was it grown? Organic? Conventional?  With love on a family farm?  As a crop on a massive agribusiness farm? What’s its carbon footprint?

As we enter 2018, consider a mindful, vegan approach at least once a week as you prepare your salad.  What’s “fresh” in January?  When you use organic vegetables, nuts, and fruit this time of year, chances are the carbon footprint of your ingredients is larger than will be at the summer solstice.
